In a large soup pot, heat olive oil. Add onion and chopped peppers, saute until onion is translucent and peppers are soft.

Sprinkle with dried oregano and spices and cook until the spices are toasted, about 1-2 minutes. Add tomatoes and broth, stir, then cook on low until thickened about 30-45 minutes.  Add salt and pepper to taste. 

Add beans, corn and chicken and cook until heated through.

3 medium onions, diced

2 poblano peppers, chopped

8 cloves garlic ,minced

2 jalapeno peppers, seeded and chopped

​4 tablespoons olive oil

1/2 teaspoons dried oregano

1/2 teaspoon ground cumin

1/2 teaspoon ground chipotle chili pepper

​1 -28 ounce can diced tomatoes 

1 -14 ounce can fire roasted tomatoes with green chilis

6 cups chicken broth

1 can black beans, rinsed and drained

1 1/2 cups frozen corn kernels

2-3 cups shredded cooked chicken 

Salt and pepper to taste

Toppings: shredded cheese, cilantro, avocado, sour cream, chopped red onion
