Fresh
pears are so delicious to use in recipes in the fall.
Blue
Cheese Pear Salad
5
cups mixed greens
2
pears, cored and thinly sliced
1/8
cup orange juice
1
tablespoon vegetable oil (walnut oil is nice)
1
tablespoon white wine vinegar
½
teaspoon
Dijon
mustard
Dash
ground ginger
Ground
black pepper to taste
¼
cup chopped walnuts
¼
cup blue cheese crumbled
In
a lidded jar combine juice, oil, vinegar, mustard ginger and
black pepper. Shake well to combine.
In
a salad bowl combine greens and pear slices. Pour dressing
over greens and toss lightly to coat.
Sprinkle
each serving with walnuts and cheese.
