Mashed Potatoes and Turnips

 

Many people are unfamiliar with turnips, but they are very tasty and nutritious. Try this recipe and you will learn to love turnips. This is also a great way to disguise turnips for serving to kids or picky eaters.

 

6 large baking potatoes

4 medium turnips

4 tablespoons butter

1 cup sour cream or plain yogurt

1/3 cup chopped chives (plus 1 tablespoon for garnish)

Salt and freshly ground pepper

 

Scrub the potatoes and turnips and cut them in half. Steam them until they are tender. Remove from heat, cool slightly and peel.  Mash the potatoes and turnips together with a potato masher. Add the butter and sour cream and mix well. Stir in 1/3 cup of chopped chives. Season to taste with salt and pepper.

 

Place in a buttered baking dish and bake for 10 to 15 minutes at 350° until top is golden brown. Garnish with remaining chives and serve immediately.
